From the Happy Canyon of Santa Barbara AVA and Happy Canyon Vineyard this Cabernet is 100% CS. The vines for this Cabernet were propigated from cuttings from the famed To Kolon Vineryard in Napa Valley. That Vineyard was the home to the Robert Mondavi Reserve Caberents. The Block that these came from are grown on a steep hillside and harvested by hand, being untouched by machines. The vines are head trained, meaning that they grow like a bush rather than a trellis using wires to hold the shoots. This type of vine is often used in warmer/dryer climates, which helps to conserve the mositure within the plant. This vine also helps protect the fruit from the elements mainly the wind and the sun. This is done by growing close to the ground, and by creating its own canopy over the fruit. These vines also produce much less fruit per vine resulting in grapes that more concentrated in flavors.
