As the bottle remains open, the plum flavors soften and notes of vanilla and smoke develop. The color has a bright deep red brilliance. Flavors of blackberry & cherry with a touch of coco on the palate, with a bit of tart acidity on the finish. Tannins are well integrated and helps provide a long finish that continues to delight your taste buds. Would pair well with some stronger cheeses, leaner meats. Filet mignon with garlic and butter or melted gorgonzola cheese.
